Outside the Gen 2 motor, what the difference between the two years?

That's the normal 350 not the R. Only changes for 18 to 19 for the R are new interior seat colors, carbon fiber dash option, leather wrapped center console, and ABS updates along with the Gen 2 motor. That's it.

19 or 20 got the new steering knuckles too. I can't remember which.

20 got the new knuckles (19 has original) - in addition to what has been said, 19 also received the solid brake rotors (vs. drilled in 15-18) and the B&O sound system (which isn't great, but way better than the older unit IMO)

It really depends on whether you focus just on what came standard on the Rs in each of the model years, how they came fully loaded, or some combination of each. It also depends on when the 2018 was built since the R-Electronics package was required after April or May of 2018.

That's the normal 350 not the R. Only changes for 18 to 19 for the R are new interior seat colors, carbon fiber dash option, leather wrapped center console, and ABS updates along with the Gen 2 motor. That's it.
But that’s not it. Camber plates came FIA. The rear view camera was standard along with AC and a host of other former R-Electronics package items. BLIS, cross traffic alerts, heated/memory mirrors with Cobra puddle lamps were part of the new Electronics package. As stated above, the magneride was recalibrated. The 2019s also got the 4G modem/wifi. Many of those things could be added on the regular GT350 in 2019, but they were not available on the 2018 Rs.

Boy, your hearing must be better than mine. No way I would be able to hear the difference while driving in sport mode (which is ALWAYS).
