My understanding is S doesn't lock up as soon as D. S is more for road course.
Going to the track and datalogging, if tuned, and having the shift points adjusted while in D will provide the most consistent and best results.
If you are roll racing, you can put the car in S, use paddle shifters to select gear, go full throttle while at the same time moving the shifter to D.
