I have a lead on some seats out of a GT350R,
Does anybody know if these will work in a 2019 GT?

Yes...

If you have a premium GT then you will of course loose heated and cooled seat functions. The seats will be manual as well (although you can swap the frames to retain powered seats if you desire).

Any issues with airbag lights? Or any issues with the plugs matching up?

Not done it myself but have researched it some. The seats will physically fit and bolt in and there should be no issues with airbag lights. I am not sure if the plugs are the same but they most likely are since the 350 uses standard Mustang seats as well.

Warning, the GT350 Recaros are quite a bit tighter than even the optional GT Recaros.
