What is normal engine temp?

What is normal engine temp for the V6? Or more specifically head temp.
My wife and I were cruising around tonight and I switched from analog gauge backward to the list of digital temps/pressures. Head temp read 203º. I assume this is normal. Does 'head temp', read higher than the old school water temp? IIRC ≈180º +/- was what a V8 would run for 'water temp'.

Mine reads 206 when fully warmed up.

Good to know. Does the V6 have a 180 degree thermostat.

Speaking of temps, what about oil temp? I think ~160 is where it should be warmed up, but what about minimum temp for 'spirited driving'? It's still cold as hell here so oil is like 40 degrees on startup and takes like 15 minutes of driving just to get to 120 which is the start of the digital meter.

Correct me if i'm wrong, but oil temps does not show as a numerical value. It just shows as either "low" "Normal" or "High". I just wait till the needle is more or less in the middle of the digital gauge.
