Are there major differences between the headers for the regular GT and GT350? Has anyone tried to bolt up a set of GT Headers to a GT350?

I see what you're trying to do there. Don't do it to pinch a penny. There are design differences so the header can clear the slight differences with the starter, transmission etc etc.

No worries, I'm not going that route. There is a custom header shop run by the guys that started Corsa, that are looking to make headers for the GT and GT350. Just looking for the basic differences in the designs of the headers.
