The time between your sessions go by quickly, so stay alert.
I use a DVM with temp probe to determine tire pressure. You'd want equal temps across the tread, but you have to measure as soon as you get back to the paddock.
Surely you will want to check lug nut torque after your first session, if not between all of them.
Get a drink, use the bathroom, talk to your mates.
40 minutes can fly by quickly!

Take some gloves (for wheels/tires), a large plastic tote to keep all your stuff in, tarp, chalk, glass cleaner, hex key for your helmet visor, power bar and drinks. My track supplies air, but not the hose or the chuck.

If you don't have a PP car, then closely monitor your front brakes. Check for pad deposit lines, and the smell. Without track grade pads, they may not survive to the last session, even with the breaks in between.

Don't forget that your GT is much more capable than you are, so don't worry about the GT350.
