Is there some way I can set up gauges and log on my own? I was under the impression this was one of the large upgrades for this device over the RTD I was previously using (other than I could never get it to connect to my phone when I actually needed to)

I'd rather not have to contact a tuner everytime I want to add a pid, and also would like to add a few more can bus gauges

I had similar impression, but no, "we" end users can't modify the log file that's used to define the PIDs. Your tuner might work with you on adding PIDs..
Once they're in you can configure the gauges from their list though. I went with 6 and found it adds a 7th large gauge in the middle. Blown away by the speed of actual can bus gauges. I had a Banks iDash before; they advertise it as being CAN BUS but it's just polling from the diagnostic port.

What I do miss from the iDash is being able to set individual "gauges" to alarm with a pop-up or change colors when outside of parameters you specify. Hopefully this device capability gets expanded to let us design themes and alarms etc eventually.
