This is the exact same setup I am currently transitioning to and I am also lowered. Going with the SVE R350 19x10 and 19x11 setup. My research suggested there would not be any rubbing with this setup. If the 19x10.5s with 305/35/19s don't rub, then I don't see why a 19x11 with 325/30/19 would rub since it is a shorter tire (slightly smaller OD). Yes may be a little tire poke but that does not concern me. 19 x 10 front with 285/35/19 and 19x11 rear with 325/30/19. I am still debating on MT ET Street S/S or Toyo R888Rs for the rears. I currently have Nitto NT05Rs on the rear and have not overly been pleased with traction. However, I plan to first air these down to say 25 psi and see if I notice traction performance. I will first wear out the Nitto NT05Rs on the new 19x11 rims before going to the 325/30/19 MT ET S/S or the Toyo R888Rs. I've heard both of these tires are extremely sticky and both will handle the strip no problem, albeit the Toyos are more of a track tire as opposed to a drag radial strip tire. Only downside I heard is that the Toyos are "loud", but not sure I'll notice that with long-tube headers and the Flowmaster outlaw exhaust setup I have.
