I’m gonna install some kooks headers on my 2018 gt I was wondering if going catless with custom mid pipes from my local shop make a difference in hp than the catted mid pipes that come with the headers

Catted vs off road LTH you would likely see <5whp difference. Cats help with volume, rasp and smell but if none of those are concerns then either is fine.
