On a 19x11" wheel? That's gonna be a very tall tire - probably at least 1.5" taller than stock PP1 rear. 45 series rears are usually run with 17" drag radials.
But ultimately, you do whatever you'd like as it's your vehicle.
Wheel size isn't gonna matter nearly as much as tire size. Case in point - both my summer and winter setup are 19". I've got almost an inch (21mm) difference in summer to winter diameter, so I sit about a half inch lower in the summer. (255/40 vs 305/30)
What do you think about those Vorti tires? I've got their winter set and interested in checking out a summer set after my PS4S need replacing, assuming they're cheaper.
