If you drive it, you will want it. I love my HEP 350. Have a couple other great driving cars in the mix - none are like the GT350. Also intentionally bought the non-R version when new.

I have original Cup2’s on my GT350 and while I don’t drive often in the cold, I do take it out on nice days when temps are under 40. My car is garaged, so starting temps are always 50+ and I’m out on sunny days so the tires do just fine. I do avoid temps under 40 when possible. No issues.
You have 2 amazing cars. The R8 was on my list as well. You've driven them both and know what they are like. Why not take the plunge and experience GT ownership for the same reason. A good investment either way in case in the off chance you want to go back someday!
