Put a wrag on the floor jack and slide it under the pumpkin. Jack it up high enough and put your jack stands or ramps underneath. Lower onto those supports. Stay centered on the pumpkin and the car WILL rise up evenly. Block the front wheels and it's about the safest way possible, besides...
You should have plenty of room to do the job by just raising the rear of the car. The numerous times I took my catback off and on.that's all I did. I'm a big guy too. Little tight on the chest at the front connection point but I was able to manage.
