I don't know about oil temperature but I can flash firmwares that have either the firmware with numeric readings + 3 gauges or the firmware with gauges only

Those won't work on the latest versions of UCDS which have the JR3T calibration, so it's a no :( I've been playing with chips and mileage, I found that the digital cluster uses a completely different structure (obviously)

I haven't tried the old version that come with this Chinese one, UCDS now is on 2.004.3 which they patched so it wouldn't work with those Chinese replicas

No one can lower the mileage of the Mustang cluster unless they get direct access to the EEPROM that has the mileage stored - it can be done on a few other Ford cars though.

You can easily flash the KMH auto firmware into the MPH manual cluster, there's no hardware difference between the 4 cluster types.
