Are you still running the stock intercooler? If so, that must be changed out for a larger one. I run an all stock motor with a bigger IC, and my boost holds at 20-22 psi up to almost 6K.

Yes, I reached out to COBB support. They confirmed that their Accesstuner would allow modifications to the temp related failsafes. Unfortunately, they have temporarily pulled the Accesstuner product while they are sorting out the EPA crap.
Not sure, but I doubt the little Mishi oil cooler is having much effect on the oil temp. When I first installed just the oil cooler, the actual and inferred temps were pretty close to the same. It wasn't until after I installed the hood vent that the actual/inferred temps spread to about 40...
I use the Track Addict app for HPDE. When reviewing the detailed data log, I'm seeing that Track Addict is only showing the throttle opened at 90% when the pedal was firmly to the floor (nothing wedged between it and the floor). I realize this could be an anomaly caused by the app not properly...

It's an interesting thought, but I don't have room in my garage for four 55 gal drums of fuel. I can barely fit a 5 gal gas can now, especially with the track tires/wheels in there as well.

Hmm, not sure about that. Pressurized liquid can run at higher temps. Apparently the ECU won't intervene until you are around 250. I can run all day 220-230 without any interference from the stock ECU. If the engineers thought that was dangerous, I have a feeling they would let you know...
