Coilovers have the ability to give off plenty of wheel travel. Our strut, for example, has about 7" of travel available. Ideally, you'll want to be at mid-stroke. The only time you start being limited on travel is when the coilovers are adjusted too high or too low.
Adding/subtracting preload won't change the spring rate. The only way that you're going to affect the ride quality is if the shock has too much preload on it and "tops out" the shock. I don't think you'll have an issue at all!
The camber is adjusted on the strut body. The caster is adjusted on the upper mounting plate.
You can change your ride height by adjusting the spanner nut, you'll just run a little more preload than what is typical.

Standard, the kit comes with 300lb springs in the front. The rear is set up with 550lb. These spring rates are what would be used on a car that is going to be used primarily on the street, however, it will produce a very good handling as well.

I disagree 100%, and I've got plenty of proof to back that up ;).
We've been running bags on our autocross/road course cars for years and have out-performed many cars with coilovers, it's all in the geometry, shock design, and shock valving.
