In the coming months I'm getting a 19x10 square setup (M350s!) and I'm trying to decide on tire sizes. I'm pretty much set on getting BFGoodrich G-Force Sport Comp2s, just cant decide on 275/40 or 285/35.

Is the extra 10mm in contact patch worth the ~20mm decrease in sidewall? They're within like $5 of each other, so price doesn't really matter.

My car is a daily driver, but on the weekends I do like going to find twistys to play on and every now and then do a little stop light racing.

Also, when I get the wheels and tires put on, if needed can I get the dealership to recalibrate my speedo?

IMO, get the 275/40. A 40 aspect is plenty small enough for responsive handling and 275 is definitely wide enough to have plenty of grip. Plus, you'll get slightly better fuel economy (very small difference) and less tramlining. No speedo recalibration either.

I thought you need 275/35 to stay roughly the same as 255/40
285/35 is closer.

I've had both 275/40 and now 285/35. IMO, more contact patch is better but at stock ride height 285/35's leave a little more gap. The 285/35 has a stiffer sidewall so cornering should be a little better. 285/35 with a 1" drop would be perfect.

I want to drop it, but at stock height I can park however I want at my apartment and work without having to worry about my splitter... I think I like the peace of mind better than an inch drop

Yea if you have no plan to drop the car, or any use for the extra contact patch for anything like AutoX or HPDE or Drag, then go 275/40 to fill the wheel well a little better.

I have 275/40 Conti DWS on RTR rims, lowered with an Eibach prokit and the sidewall looks too big IMO, particularly in the front. I regretted not getting 285/35's which would look much better with the lower profile and wider patch.

you can go broth routes it all really depends on the tire brand you want to go with.
What do you recommend paul? I'm looking to stay around $225 a tire or less. Otherwise it'd be a no-contest for MPSS
