Except for the safety of not hiring enough (any) corner workers (which I've NEVER seen at ANY event) - it's just a question of value, as you said.
I didn't say the drivers weren't experienced but someone pays their paycheck and somewhere the decision was made to not spend on the money on (what I feel) is a very important aspect of a track event - corner workers. Also, there were only a few instructors there, so it was evident there was no real intention of "instructing". So in the end, someone designed that program....to make money. A regular HPDE, there are enough instructors to ensure you have one 100% of the time because usually, they pay their instructors by offering free or very discounted track time.
Personally, I think seat time with an instructor is SO important as a beginner to learn the basics and not build bad habits right off the bat. Sure, it's exciting to be on a cool track with a cool, real race car but to pass it off as a "school" is...not exactly true.
Edit: Just realized that OP said he wanted to get some seat time in the GT350 with an instructor - so he's referring to the first day there. I got 2 laps with an instructor in the car out of all of the sessions - just so you know what to expect (not sure if that's on par with others experiences. I'm sure they will say here). First day is the no-brainer, though - value is there, as Ford is footing the bill for that.
