i own a 2021 gt with a 355s gear in the rear axle what is the difference as I see some car are equipped with a 315 gears

Boosted 3.15 hands down. NA 3.31 to 3.55 depending on rear tire size. 26" 3.31 gears. 27" or 28" 3.55.
* assuming you have a 10R80

Most automatics come with 3.15 gears in the GT, but the 3.55 is an option. The Mach 1 with the 10R80 transmission comes with 3.55 gears in the rear end.
If I had a 10R80, I would prefer the 3.15's for DD or highway driving, but 3'55's for track or strip for a NA engine.

3.15 gears are by far the most common, that's what comes as standard equipment in these cars. When I was shopping for my car I came across very few with the 3.55 option.

I have 3.55's. I was told all cars that came with 20" wheels automatically got the 3.55's. I don't know if that's true but it is true in my case.

That would make sense, the factory 20 inch wheel/tire combo is slightly taller than the stock 18 and 19 inch sizes, and the 20" rims weigh a ton so they would need more gearing to keep up with a base GT from a stop light.

Actually on my 2017 GT both the 20" wheels and the 3.55 were extra cost options. The 20" did not force you to get 3.55.

It was the same way on my '15, both were options independent of each other, however, at that time, most cars were sold from dealer stock, and it makes sense that they would pair those options for the reasons I mentioned. I don't know if it was truly a standard practice for dealer stock, I'm just saying it makes sense if they did it that way.

Imagine you're a salesman on the lot with a potential GT buyer, he goes for a test drive in a base GT, then you steer him to a premium model with the 20" wheel option, heavier car, heavier wheels, taller tire diameter, if the car still had the same 3.15 gears as the base model, he might notice it didn't feel quite as quick. How do you talk him into spending more for a car that doesn't feel as fast? Probably not an easy sell. So, when the dealer is ordering his allotment, it wouldn't surprise me if he made it a point to get the 3.55 gear option any time the 20" wheels were optioned as well.
