The Mustang will be replacing my ST, if I end up buying it, mainly because it has more room and the seats don't hug you like a boa constrictor. I'm hoping that it drives close to how the ST does. I've never driven a Mustang before, but I doubt it has the go-kart feel that the ST does. I'm worried that I'll miss that too much.
The ST is a fantastic car... if you can fit in it. It's the best driving car I've ever driven. It's quick, it handles like it's on rails and you can get it sideways if you try. Yes, it has torque steer, but I actually think it adds to the fun of accelerating. I don't think you could go wrong either way, but they're pretty different cars IMO.
