Take it from someone who has owner a V6, and driven an EB, the insurance bump is quite small, but, the 'smile' factor is huge!I'm gonna go against the GT grain here...
GT eats more gas (much more!). The GT also costs more to insure now matter how you cut it. These two should factor into your next purchase decision

Meh. My insurance went up $12 / 6 months for the same coverage (V6 Premium to GT Premium). Yes, maybe 15 to 20% less. Not too bad in the scheme of things. Drive like a Grandma, and you can do better when you want to.
