The 2015 ecoboost roughly weighs around 3500lbs.
What are some good ways to reduce the weight without making it ugly...

Depends what you mean by making it ugly, but here are ideas.

Aftermarket exhaust is generally lighter than stock.
Rear seat delete kit. (Mine saved 30lbs. That being said, weight reduc wasn't my primary goal)
Lightweight wheels. I think stock PP wheels are around 30-35lbs?? (wheels only not tires)
Eventually there will be a carbon fiber hood I'm sure.

Single 3" stainless will be the lightest/best flowing exhaust for now (ultimate racing or custom), remove all the chassis sound deadeners for a few more lbs, and put the battery in the trunk to get the weight distribution back right. The recaro seats are lighter than the base seats. I've added weight with an oil cooler and slightly bigger intercooler.

My plans include far lighter wheels (apex 18's if they fit) and full floating rotors with the stock PP calipers.

also, when the Gt350 comes out, we may be able to borrow some of those suspension components, knuckles and stuff are supposed to be aluminum instead of the pig iron ours are made out of.

And the hood and front fenders are already aluminum, weight savings by changing to CF would be minimal, if at all. Most CF hoods are fiberglass with an overlay, and a real CF hood would be so expensive the lb or two you save over the aluminum stocker wouldn't be worth it.

Odyssey PC680 battery. Saves about 25 pounds.
Lighter wheels like the Enkei PF01 can save another 25 pounds.

I like the battery idea. I wonder how well it would do in the cold crappy Chicago winters? Can I come down to Dallas? :D

LTW battery, in the cold. not so much... Those are good (sometimes) in a race car, or something that you don't have to rely on to start all the time. I've used a few brands, including odessey, deka, and braille, and always been disappointed.
