Cranking up the torsion bars does not increase their rate exponentially... or at all. Torsion bars have linear rates that the biggest problem OEMs have with them. Its also the reason they design them to sit on jounce bumpers to give a progressive spring rate at the wheel. The bouncy ride was from the suspension losing the jounce rates it was designed to have. With the weight of a 6.6 duramax this was an essential part of the suspension. With out it the shocks just were not enough.
There is no problem with cutting yours if you want to. Definitely cut them if you have linear rate springs and are sitting on them. My issue with cutting the Eibachs is they designed the springs and jounce bumpers to work together. If you cut them yes it will still work will it be the rates Eibach claims, no it wont. If you were looking for a less harsh ride you should have got springs with softer rates.
suspension is so subjective to user preference. My soft and bouncy might be your perfect and comfortable. My comfortable might be way too stiff for you. or vise versa. I think buying adjustable shocks and struts and rather than cutting your jounces. Accept that the eibachs are too stiff for comfort and buy another option.
