Finally figured it out guys (how to hold the gears until you want to shift). Put it on S on the shifter and then into S or S+ on the menu. Totally changes the car into almost a manual feel without the actual shifter of course. May not be faster that way, but sure feels like it!
I'm thinking for purposes of hanging gears like a manual that S alone should do it. Try dropping into S and paddling one gear. After that first manual gear change you should be hanging gears like a stick. If you do not manually change a gear then the S will behave like an auto just with different shift points.

I don't believe there is a need to switch into any of the modes like S+ or track.

Correct, if you put the shifter in S and manually change the gears (via paddle) it will stay in manual mode. If you wanted it in auto afterwards, you'd have to switch the shifter back to D then S again.

My left knee is a mess. I went with the automatic and I'm happy with it.

Got the shifting part out of my blood driving jeeps in the army for so many years.
