Car feels slower or not as aggressive when accelerating

Hello; Perhaps a real world example can help. My current pickup has a 292 V8 and 3.73 differential gearing. My previous truck had a 300 inline six and 3.08 differential gears. Apples and oranges in some respects but both 4x4's and half ton capacity. V8 with 3.73 gears gets better fuel economy than the six with the 3.08 gears. The V8 accelerates some better than the six.
Point being there are so many combinations in play that feed off one another to point too closely at one thing.
