always really liked the colour in the door panels.
But was a bit too worried liking it long term to get the seats in red. I think the striping on the 2013ish GT500 was neat. (two Lemans stripes on the center)

I agree, all the black upholstery is boring.
No way you should let the upholstery turn you off on a car that you otherwise want.
You don't have to limit yourself to the factory offerings.
Get in touch with Katzkin or Leatherseats.com or Roadwire and they can do all kinds of colors and patterns.
Think $1K-$3K, depending on how fancy and how much DIY you can handle.

Those are gorgeous.

I have a set of leather seats in ceramic that I am looking to trade for a black set if you have them. The color is great just prefer the black seats

I love the saddle brown seats although I wish the entire seat was brown. I like the ceramic too although I'd worry about staining and discoloration being more obvious as it ages.

Ceramic is def an accurate name for this color, it is kinda greyish beige. Like wet ceramic. The one pic up close makes it almost look dirty, it is just the lighting, but may give a more accurate color idea. A little more grey than a cue ball.

I originally was going to order a base gt in antimatter blue with ceramic interior. Wanted something different but ordering the GT/CS took that off the table. Would have been nice with more options but I’m happy with the choice I made.
