Xpel stealth is good stuff, I don’t have any experience with the 3M matte. It doesn’t quite look like dry carbon in my opinion (if that’s what you’re going for) but it would get you close.
I used to run the 275/35/18’s on my 2003 Mach 1, they are a good “D.O.T” tire. A few things from my experience with them;
1) Great for longer track days.
2) They are greasy when new (despite what some people may say), but do a typical 2-3 lap scrub in and they were ready to go.

If it’s a parade lap nowhere, sometimes oval tracks set up cones on the straights to make it more engaging, I’ve never been to Talladega so I don’t know if that’s the case. Just responding to OP’s original concerns, consider yourself schooled?🤣
You should be fine with the stock fluid then, if you are getting into the brakes hard for the 5 laps just replace it with Motul RBF600 and double check your pads after the event and you are good to go.
It’s essentially a few different solvents and polymer type epoxies (safe for automotive finishes) it does have trace amounts of BPA so wear gloves and practice safe handling procedures.👍👍
