The 30" tire will be tight. I run a 315/60R25 (29.9") ET Pro and they're VERY snug. That's on a 15x11 wheel with 8.5" backspacing to get it to tuck. Not sure what your wheel offset is, but I had to trim some of the inner fender liner away for clearance. I also had to run a T-Bar style upper...
I mean the top 15 in the US are all 7's so it's coming more and more the norm. Midnight has a full 10 speed car with AC and all running high 7's.

you need the calipers, the rotors and the dust shields to be complete. I bought the dust shields from the local ford dealer for like $12. But yes they bolt right up without any modifications. Caliper and rotor sets regularly go for $500 sometimes a little more, sometimes a little less.

You're going to be severely limited by the 93 octane no matter what you go with. Basically everything the aftermarket has to offer will have the same horsepower limit because you'll be limited by fuel. Might as well go with something easy and cheap. I vote Centri for that reason, although...

I've had and still have plenty of both, but wanted to run 8's in a daily driver full weight car. The 6 speed just isn't up to the task. That being said, I'd still love to have a GT350. But my next build will be a Superformance GT40 with a sequential, so it'll really be neither and both lmao.
I run more tire than anyone I've ever seen and even have a weight bar. Definitely not easy on the street.

A full fuel system and full E85 will allow quite a bit more boost safely. I'm on 18lbs with a 3.0 whipple.
I work overseas and didn't have time to get started on the wiring before leaving so just rigged that up for lights temporarily. I had to get everything inside the shop before leaving. Once I get back home, electrical, plumbing for the bathroom, etc will all continue.
