Go with the 305/45r17 (28 inch) Mickey et street r . The taller tire improves traction and assume you have a 10 sp auto with the gear ratio so out of the hole you will be good.
Any weight savings of the shorter tire will be lost to less traction out of the hole.
On my 2015 GT I installed GT 350 intake, Stainless works long tube header with cats , H pipe and Boral touring exhaust.
We tuned the car on dyno and it peaked out 435 hp.
It was very loud so decided to reinstall the factory ford exhaust resonator on the spot.
Put it back on the dyno and lost...
Just removed the cats on my stainless works headers installed in 2016 on my 2015GT with Whipple. Kept getting error codes and not required to have e-checks so they are gone.
Cannot really tell any difference in how the cars runs.
My 2015 has been set up nice with Whipple, suspense, headers, axels, beadlocks, drag radials. Wanted to do a few test and tune at my local drag strips but they require a six point roll bar on a convertible with supercharger. They assume it will run in the 11's.

You should be good, that is plenty of tire for the front. I ran a set 315 fronts on Ohio/Michigan roads and the wider tires track poorly on rough roads and add rotating mass that you can feel over the 295.

If you compare all of the car mag test in the 1/4 for high horsepower rear wheel drive cars they are all over the place. The corvette does so well in drag race comparison being mid engine rear drive.
In fairness they test the cars as sold, not enhanced.

The Gt500 is such a complete package that a lot of very good engineers speced out and designed. IT is a great car and does everything expectational well.
A highly modded GT is great also but normally as balanced.
The trans in the GT500 puts the car at a higher level and to me, makes the car.
