The aftermarket makes a GT500 style hood for the 18-23 Mustang GT. Looks the same but fits the newer 18+ fascia, headlights etc.

For the shifter you could always buy a center console out of a parts car to cut up and modify. Then you can keep yours fully intact for reversibility.
