It really does come down to experience. If you're comfortable with breaking the rear end loose when you get on it then TC kind of just gets in the way more than it helps. Also I don't think track mode disables TC entirely.
I also keep it in track mode most of the time. I don't like the overly sensitive pedal of Sport mode and I don't like how often the 10 speed flares shifts in normal mode.

Is the car tuned? Any modifications on the car? Check the transmission fluid level, the 10R80 is really sensitive to the right level. Look for fluid discoloration. Is the transmission overheating? Is there any fluid residue on the transmission from it burping fluid? You can also try resetting...
If car shows are important I would keep the Boss, those cars are amazing.
The GT350s can be really nice, get one with the tech package and it'll be a huge interior upgrade from the Boss.
I recommend a 2022-2023 GT with 401A.

If it hasn't overheated you might still be ok.
The 2015s were pretty fragile though.
If you try for the gasket route look into upgrading the gasket and studs.
A new block would be ideal, depending on cost.
