What ever you do, do not agree to pay the $1200.00 price they are quoting you, it's insane. There is no specialized knowledge needed and a local mechanic can do it for a substantially better price.
From the nature of the questions you're asking regarding data logging, it would be a good idea to have someone look over your CAI install to insure everything is where it's supposed to be. Did you change anything else on the car?
The official fuel quality tester that has been saving engines for years: KR. Monitor engine knock after every fill up, and do a WOT test after the fuel is thoroughly mixed and hasn't indicated positive knock.
Drive the car and find out how the CHT behaves at its high point. Under normal driving, CHT should level off and maintain its self 200-220 degrees. If it steadily continues to rise above this something is wrong. Check your cold-fill coolant level, too.

You have a '22 so your intake does contain a carbon trap that restricts airflow. Remove it and then install a high flow air filter. You'll have the best air intake you could ask for.
A user here posted pictures comparing the catalyst material inside the catalytic converters of both the GT and GT500. The GT's cats have a honeycomb structure while the GT500 has a square structure that is visibly thicker.
