My old MX-5 was once broken into while unlocked. Never bothered locking it as there was never anything left in it and had a tracking and monitored alarm system. Most dealers I've been at keys are kept in a key lock box. IF it's locked it can easily be forced open with a screwdriver.

You're not going to lift the whole car at once with it so 1800kg is plenty with a margin IMO. You're likely to jack up one side of the car to get stand under it so it's unlikely it'll need to lift more than 1000kg at a time, probably less.
