As a business owner it would be very difficult to do, you'd need to split your company imo. Seeing a $500 vs a $3k tune with no guarantee it will be faster is a hard sell on the same website.

In Australia this is how most tuning is done. 1-2k for a tune, car goes on the dyno and spends several days to dial all the niggles out like false knock from pipes rubbing.
Full smoke test etc, you get what you pay for especially as these cars get older.

Inferred flex fuel on 18-23 S550s was prone to user error and on big power motors this was too much of a risk for many tuners. It can be and has been done by many, but there are better options available now.
They would need a minimum protuner + custom OS for 1 car. They can then upgrade for the difference in price to global workshop edition. Approximately 2k USD for the full edition and $980 for the 1 car edition. The upgrade product becomes visible once you purchase the first edition...

Couldn't agree more about the TB model being spot on. Whilst everyone hates on Roush the stock throttle body makes this a lot easier.

If it is the same tuner or the tune is not scrambled/locked they can add on top of it, though most tuners will start from scratch as they do not want to inherit other tuners problems.
You get access to about 40,000 dmrs in pcmtec for logging if you know what you are looking for. Any option will work if you can identify the problem, it may be tune related in which case a log and sending it to a tuner may be a cheaper, more effective solution.
A laptop and cable will suffice. However there are handheld devices that many tuners use for remote tuning.

More than happy to walk your tuner through it however it is up to them if they are willing to offer it.
If abused it can damage the car in many different ways, they may not want to offer it for this reason. It also can act like a clutch kick when releasing it, depending on your power levels...
The tuner who primarily used it left afaik. I don't want to get into the politics of it though. They did some excellent testing and videos in the earlier days.

The first one should fix all your issues. Bump it up to 900 or so at the temps of issue. Should increase timing also which in turn will decrease EGTs and hence ECT. I assume you already have the fans maxed out at that temp range?
I'm sure there is an ect/wot and possibly iat idle adder you can adjust to simply raise the idle if the ect is too high. I bet an hour digging through all the tables and you will find it in PCMTEC
