I would call CJPP to make sure. But since it fits the 2011-2016 Mustang, I would get the adapter. The 2011-2014 didn't have the pull up reverse lockout like the s550.
If you are going to be in the vehicle 2 hours every day, I'd rather have the bells and whistles. The power of the GT is nice but I'd rather be comfortable. Coming from a Jetta, you will have a step up in power anyways.
Who are you getting to install them? I converted my headlights on my 12 to projectors and the headlights were pretty easy to get apart. I haven't heard about the ease/difficulty of pulling the S550 headlights apart.

You are absolutely correct but it was free so why not? Very small benefit is better than none at all. If I would have had to pay I wouldn't have bothered.
I deliver the mail to a local tire shop. They did it for free but I think they usually charge $7 a tire. All the tire shops in the area have nitrogen and will refill your tires for free if your pressure is low.
Sounds like fun. I guess the only way to really know is to deflate and inflate with the gas of your choice. Mine came with regular air and I had them re-filled with nitrogen.
