I think it is Ford's goal to match the Easter Egg at 755, no way they are looking at 800+. If the 500 gets close to 755 with ample torque and handling and some creative ways to shave weight, most will be very happy.

If you are not planning to track it, and like the option to be able to put the top down on nice days, I would go with the vert. Performance will be almost equal and you can always add power to the vert, can't cut the top off off the coupe later.
I went with the epoxy also and had it professionally installed, used Sherwin William commercial grade epoxy, goes on much thicker than the box store stuff. Recommend using heavy media chips and you can add anti-slip if you use it a lot wet. They look great and hold up for years if done right...

The vert cloth tops are actually high quality and seal very well, you could do a hardtop convertible but it does add weight and you lose storage. I rarely put my top up anyway and can store my golf clubs in the trunk with the top down with no problem.
