Lets talk drag mode. I know on launch it will make it squat and make the front suspension softer. What about going into corners in drag mode? Is the suspension turning hard in front like in track mode or does the front stay floaty and soft to keep the weight going to the rear?
Can we get pictures of the purchased Bullitt? I changed the following fluids after 3 years:
Brake fluid
Tranny fluid
Rear diff fluid
I will change them again + coolant in 3 years.

I get new sport cup 2s every year, fronts go before rears. Unlike the others I am unwilling to downgrade my tires for the street. Tramlining gives it extra character and I can go into corners at high speed without worrying about sliding off the road or hearing my tires squeal.
I think the 2mph difference was in the automatic vs manual Mach 1. My guess is the speedo is calibrated for HP wheels and tires on base Mach 1 and you are actually going 168mph not 157mph. Did you confirm the speed on GPS?
Gen 3 coyote takes longer to learn the fuel, sometimes not enough time causing issues like yours. This is why lund stopped flex fuel tunes. Reflash the flex tune and it will start the learning process. Should be much smoother after.

CAI and headers is not FBO. Check your CAI and make sure its tight on throttle body and at the filter. A loose filter clamp can and will stall your car, it also explains the uneven idle.
