As stated this is normal sound with a CAI without any air chambers. That is why the factory puts all that stuff on the air box to stop the car from whistling.
LIke a few I just backed the car up onto ramps. Gave me more than enough room, made it a little tight working on the front of the H pipe but still got it done no problems.
Just to clarify with a stock tune the car does not do this correct? That is very odd it is like the car is rev controlling itself almost like a speed limiter. It holds RPM perfectly, I would contact LUND for a tune thru Beefcake Racing. He will take good care of you.

What does rev matching have anything to do with double clutching? Look at this way rev matching allows a super smooth shift that not only helps the driver but the drive line itself. I have been told by multiple transmission builders that double clutching is pointless with modern day...

I agree would be a good roll race for sure. Depending on the gear in the GT could put it out front from the get go or later on. The factory 3.31 with a M6 make the car too long winded
