Painting the lettering works too. just use mineral spirits to wipe off any bleed over on the raised portion of the plastic.
I have not done the 'Shelby' lettering, but I have done lettering this way on the interior of my jeep.
If they deny your warranty coverage, a friendly reminder of the Magnusson-Moss Warranty Act might be in order. The onus is on the dealer to prove your modifications caused the problem. Not the other way around, where you have to prove it did not cause the issue.

Also, do you have the contact info for the upholstery shop you used? I'm not opposed to sending out my parts to shop that has done the work before and know what they are doing.
