It's actually quite easy. I think there's a total of six screws that hold the whole thing in. The knee pads just pop off and the top section also just unsnaps. The bottom has a few screws in the front and some in the storage box.
Those are a bit complicated. They're plastic welded/staked to the door outer. To remove them involves some drilling or grinding to cut the caps off the plastic studs and putting them back together just involves some screws.
You can get it from any ford dealership or online. I think it's about $70 and comes with a new vinyl boot attached. Part number is 7277. You have to ask for the non-sync version though.
Just spoke with Ford. The assembly ends up being almost $700 new. Just snagged one for a good price off ebay to use as a core though :D

I have to call my local dealership to get pricing on a few things. I'll ask about the console. I'm hoping it's cheap since it's just a big piece of plastic but you never know with these things.

The console is a poor candidate for leather unfortunately. You would have to get the leather shaved down really thin or you will have fit issues with the panels like the Rocket interior does. Also, leather will tend to pull away over time from some of the edges exposing the plastic underneath...
