What is the meaning of pp1,pp2 and s500
PP1 = Performance Pack 1 (still available)
PP2 = Performance Pack 2 (now discontinued)

PP1 = base level of orderable OEM performance upgrades; consists of some suspension, cooling, aero mods and interior gages. Notably does NOT include MagNeride upgrade (that is a second option conditional on ordering the PP1).
PP2 = Last offered on 2020 cars. This is the next level of OEM performance upgrades and includes MagneRide.
S550 = this is the current generation of Mustang, going back to 2015. It is widely held that 2023 will see the introduction of the next Mustang generation and platform, named S650.

Maybe an easier way of understanding S550 is that all of the Mustangs built since 2015 share many common frame/exterior/interior features, be it the original V6 Mustang base or a GT500. The changeover to the S650 car should have significant changes in styling and interior/mechanical features.

Big picture, model year 2021 saw a lot of change in the cars/options offered.

Previously in 2020, you could order the following:
Mustang GT with PP1
Mustang GT with PP2
Mustang Bullitt (essentially a PP1/2 car with better street manners and unique appearance)
Mustang Shelby GT350 (a step above the PP2 with a different engine and transmission and unique appearance, much beloved by pretty much everyone).
GT500 (supercharged V8 halo car that shares little with the rest of the line and costs $75k+)

In 2021, you can order the following:
Mustang GT with PP1
Mustang Mach 1 (the Mach 1 is considered a step below the Shelby GT350 but a step above the previous Bullitt/PP2; despite being an excellent car people are not enthusiastic about it due to losing the Shelby and the fact that the Mach 1 does not inherit the Shelby's unique engine).
GT500
