I've owned a 991.1 C4S and a 991.1 GTS, never a GT3 but have driven one on several occasions. I was entertaining a .1 GT3 but in the end, I went with my GT350R. If you go over to rennlist, other GT3 owners have indicated that they prefer their GT350R. In my opinion, the 991.1 GT3 is not twice as good as the GT350R.
Now, the one that would really make me stop and think is the 991.2 GT3 Touring. The 4.0 is an amazing motor and in my opinion, second to none. That motor paired up with their silky smooth and well geared manual transmission is really something to behold. Plus, the GT3 touring will hold its value better than any other modern Porsche GT car imo - it's basically an updated 911R. I asked a couple of dealerships about GT3 Touring allocations and they all laughed. They can get me a new .2 GT3RS allocation, but not one for the touring. If you're looking at cost of ownership and factor in depreciation, the GT3 Touring is likely cheaper than the R to own.
As for warranty, in my experience, Porsche has been the best out of every car I've owned. The 991.1 GT3s had finger follower issues that blew up engines - their response was a transferable 10 year 120k miles warranty on those cars. I've gone as far as taking my cars in for creaks and rattles - all covered under warranty.
So short answer is no, keep the R if the alternative is a 991.1 GT3. If you can swing the Touring and can get an allocation, I'd go that route. Or get a 997.2 GT3RS
