I looked up 255/40R19 after your suggestion. It shows decent amount of options, is just tiny bit smaller on the back. Will probably go with Sotozzeros 3, very recommended.
FWIW, I have 245/45-19 on all 4 corners of my winter setup.

What baffled me tho were the rims. Keep getting confused by offset. Customer help suggested 35mm offset at most, 40 questionable and 45mm might not fit.

Do you know what offset you got, or what's the max/min?
I have 42mm offset on all four 19x9 wheels and have zero problems.

Offset confuses the living hell out of me. As the wheels go wider, the offset goes bigger. So, if I had the 19x10 Boss 302 wheels, the offset would be 47.5 mm. From the looks of it, as the wheel widens, the offset increases by half the wheel width change. ASSUMING that is really the case, going back to a 19x8.5 would be lowering the offset to 39.5, and going back to 19x8 would pull the offset to 36.5mm. PLEASE REALIZE THAT IS FREE ADVISE FROM A STRANGER ON THE INTERNET WHO ADMITS THAT HE GETS CONFUSED BY THE SITUATION.

Yeah, offset is one of the most confusing parts of this. Another customer service (I think my 3rd time chatting with them) assured me that I need 8.5" width at least, since the tire asks for 8.5"-10" (that one is DUH, but their software still suggests 8" anyway).
He said offset up to 40mm should be good.

I'm likely going with:

And:

I thought about getting one of those machined black, which would look similar to stock Bullitts, but something about that multispoke and matte gray seems really cool to me.

Offset doesn't really have anything to do with width but yes, it's lower with wider wheels to push it outwards and more and make sure it fits against the strut.

45mm in the front will fit for any 9" wide wheel (narrower obviously too) and 255/40/19 tire with lots of clearance. Lower offsets will push wheel outwards.

(I have square 255/40/19 set of winter tires on stock Mustang "premium" wheels I bought off someone from the forum (45ET I think, 8.5" wide).

Well, it (offset) has to do with clearance for the brakes etc, though, no?
Tirerack suggested I stay around 35-40mm. I think my favorites are 38mm and 35mm (respectively to pictures below) offsets on 8.5" rims:

Offset is 0 when the mounting surface is right at the center of the stated wheel width, regardless of how much. Positive offset is how many millimeters to the OUTSIDE of the wheel from the center of the wheel. Basically all stock automotive wheels have positive offsets, but the more offset you have, the more INWARD the wheel would sit from the fender (towards the strut, in this case).

As an example, if our 9" front 19" wheels had an offset of 45mm (1.77" from the middle of the wheel), and you want them 1" closer to the fender (you want to move the wheel to the outside), you'd need to add 25mm of negative offset, therefore the offset you'd need is 45 - 25 = 20mm of positive offset. Now, if you want 10" wheels, you'd have to compensate for the extra wheel width, meaning you'd need more negative offset to have the wheel sit at the same distance from the fender than the 9" wheel (assuming the extra width clears the strut, of course). Hope that makes sense :).

This might help. Actually, the two smaller "width" are WĂ·2. Offset is the distance from the hub mounting face to the centerline of the wheel .

Thank you both. I've been looking at multiple websites and I understand what positive offset is, even though it's confusing, similar pictures to what you've posted that I found on comparator websites helped me understand better. When I compared the offsets and rims, the drawings on the sites seemed to be pretty spot on.
I'll post in here what I think my final setup will be.

Went with the Sottozero 3s with same sizing as summer tires. Discount Tire found replica wheels for $185 each. I guess I look at these as winter tires not “snow” tires. I live in Chicago and with the snow clearing capacity the cities have I rarely drive on snow. So I want the same performance as my summer tires.

That's exactly what I went with! :)

I thought I posted a final decision I've made. I went to an all-around 255/40R19 Sottozero 3, it was heavily recommended by TireRack customer service (I bothered them like 6 times). We've had actually lot of snow in OH this year, so glad I went with these. I'm getting better traction than all the little CUVs and SUVs who think their all-seasons and AWD will be unstoppable.

Along with Bremmer Kraft BR16 in matte titanium color, it looks fantastic, IMO.
I'm actually debating keeping those wheels even for the summer, but the stock Bullitt wheels are just too classy to not put back on...

Does anyone know if the 2018 black appearance package wheels (19”) fit on all four corners of the bullitt?

@aileron

How are the wheels working for you?

Mind posting up a side pic please?
Not sure who this was addressed to. These are the $185 wheels Discount Tire found for me.

I have Bullitt center caps in my summer tires. Will replace these center caps with the Mustang center caps for next year.

Just swapped mine back to summers literally yesterday, supposed to be above 45F from now on. I was getting better fuel economy before on my winters, probably because they were 255/40R19 all around...

Depends on how you were driving - 255s make your gearing shorter so for highway driving they absolutely do make fuel economy worse.
