The factory recommends 5w20 for my 2019 GT. DD temp is 203F.
Track day temp runs 240F max. I have no additional oil cooler.

Looking at this chart for 203F (95C) and 20-weight (=ISO 68), we see they intersect at 10 cst.

Next, I slide over to the right along the 10 cst line until I reach 240F (115C), and it intersects the ISO 220 line (237F). ISO220=40 weight.

My conclusion is that 40 weight oil on track day is the same viscosity as 20 weight oil for daily driving. 30 weight is sufficient for track morning sessions, but gets thinner on hot afternoons after the engine has been heat soaking. Adding an additional oil cooler is a good idea, especially for 30-minute sessions.

I plan to change to 40 weight for the first track day, and keep it in until the last one, then switch back to 20 weight.

EDIT: Corrections as per @StangTime.
EDIT2: more corrections.

Next, I slide over to the right along the 15 cst line until I reach 250F (~120C), and it intersects the ISO 220 line (=40 weight).
I follow the 15cst line to 120c and see it intersects ISO320.

Good catch, and thanks for checking my work.

This graph can also be used starting with the factory recommend 5w/20 oil.
SAE20 = ISO68.
At 87C (189FF), ISO68 intersects at 12cst viscosity. Sliding over to 120C shows ISO220 = 50 weight.
At 96C (205F) ISO68 (SAE20) is only 9.5cst. Which is what SAE40 is at 120C.

Why not just go 0w40? Thats what I would do
That's exactly what I did... 0w40 Mobil 1 since my first oil change. Haven't looked back!

Look at A3/B4 oils especially with BMW LL-01 certification.
Castrol Synthetic 5W-40
Penzoil/Quaker 5w-40
new Mobil 1 ?w-40

Use these in turbo race motors w low coking.

I decided to put in 5w30 oil for now, as I was overdue. The 2021 manual specifies 5w30 for Gen3 5.0 whether GT or Mach1. Seems like Ford is shooting for 12cst viscosity.

Then I will save the 10w40 for any extra hot track day. Max CHT was 240F last year at NCM on a very hot day.

Personally, I would pick Mobil1 0w-40.

Never put a 10W-XX in a hyvo chain driven bearingless overhead cam motor…….
0W or 5W only.

Are all Coyotes equipped with that from the factory? I thought it was a recent thing that came up?
As far as I know most folks refer to cam chains as the generic word cam chain and not the actual term, HYVO/Silent chain.
There’s always the possibility I could be dead wrong but regardless there are specific oiling requirements for HYVO/Silent chains for long service life (thin 0W or 5W is mandatory).
This is more known in aviation where separate oiling systems were designed to lube the chains with specific light weight oil while maintaining dedicated engine oil lubricant.

In my 2018 Gen 3, I recently had a cam solenoid on the drivers side exhaust cam fail. I have been running 5W-50 Mobil 1 to help reduce the "barbecue" tick. I think it may have contributed so I would recommend being very careful when playing with oil weights other than recommended. The orifices in these engines and components are very tight.

Factory rec is pure 100% bull sh#t. They play with the viscosity to shave epa efficiency figures. Factory rec since 2021 is back to 5w30.

10w30 all the way to 10w50 is the correct viscosity for warm weather or severe duty. The only problem these days is finding 10w anything since almost everything has gone down to 5w base stock. Again from a pointless and stupid myopia over mpg.
