Dunno, but if I have no proof/documentation of oil changes, I'm not sure I'd blame Ford too much for not covering my engine.
Unless it stated somewhere very clearly that in order for your warranty to be intact you *need* to provide exact receipts for all maintenance, yes you can blame them.

I have yet to see that statement from Ford, if you have please let me know where it is.

If it helps just re-reading the manual here for my 2018 GT.

It says under capacities and specifications for the 5.0L, either 5W-20 (WSS-M2C948-B) or 5W-30 (WSS-M2C913-D). Both are listed. It even says for temps below -30ºC (-22ºF) use 0W-20 (WSS-M2C947-A).

I use 5W-30. Gives a bit more protection (sheer strength) as it resists higher temps, won't break down as quickly and so reduces wear (better film protection). A 5W-30 will add a bit more friction so there may be an economy trade off but it would be minimal.

If you don't know what to go with, perhaps simplify it. Colder climate, go 5W-20. Warmer climate, go 5W-30. Mixed / Seasonal weather. Either will do. And according to Ford, both are fine to use. :)

As to why this may have changed, perhaps Ford noticed problems with wear and wanted to increase longevity, or wanted to dampen engine noises?

Oil threads........ oy veh.........

Was interesting to see that Ford changed the oil pump to belt drive and cyl deactivation on the 21 Truck motor.

Half 0w40 amsoil signature series and 5w50 in the winter, full 5w50 in the summer on my whippled car.

I don't remember where I read the article but If I read it correctly Ford changed the valve lash adjuster on the Coyote for 2021, something about the bleed holes being too small so they enlarged the bleed holes and at the same time changed the oil requirements to 5-30 instead of the previous years of 5-20. Anyway, that's what I think I read.

That is very interesting. In the 2019 manual on page 310 they list the chart for oil spec and they list 2w20 and 5W20 only. The only place I see a listing for some form of 30 weight hot is for the Ecoboost engine. For the 5.0L, anything warmer than -20F, 5W20 is recommended otherwise both 0W20 and 5W20 cover the spread from -20F to above 104F.

The only time 5W30 is listed, in my 2019 owner's manual, is on pages 250 and 306 for track use. Since I have a PP2, there is a supplemental book, 2019 Mustang Supplement Performance Package Level 2 and it restates the same on page 6.

Interesting if things have changes from 2018 to 2019.

To resurrect a necro-thread, I thought I'd post what out 2019 GT has in her manual. 5W-30 for daily use, 5W-50 for track. (We're in the U.S.) 😀 Cheers!
Indeed it does... but... on page 298 starts the heading "2.3 L Ecoboost". The 5.0 section starts on page 302 (fitting) and that section calls out the usual 5w-20 and for track use 5w-30. By not putting headings on each page Ford made it easy to get confused.

I just like the 5W-30 and run it for that reason.

5W20 is just an EPA driven thing. I run 5W30 in my Tundra (TMC says 0W20) and my Bullitt (FMCO says 5W20). Both manuals recommend 5W30 for HD work. Is good enough for me, and while I am sure a high quality synthetic in 0W20 or 5W20 will protect fine, I will err on the higher viscosity and film protection, and take the 1-2MPG hit.

One thing I am researching is the oil pressure modulators that seem to lower oil pump/pressure resistance at Idle for the same reasons. I'm convinced this is part of the odd sounds at idle/noisy engines we are experiencing.

Or maybe it is so the oil will drain back from the heads fast enough to keep some in the pan at 7000 rpm.
