UV Protection for Convertible Interior?

I have a new convertible with a black leather interior. What products are best to provide protection against UV and other environmental elements (aka bird poop) for the leather and plastics? Cleaning is one thing and I've got some great Chemicals Guys products for that. I'm really concerned about protection since most cleaners don't really give any.
