I think youre right. My friend has a brand new 2020 GT and does not sound stock even though it is. According to some 18-19 GT owners, the stock exhaust sounds like a 15-17 system with resonator delete. Also, having the active exhaust system can be a factor here for the 18+.
Do you have pictures of how they look? How did you modify the valence to accommodate the quad tips?

This is how the GT exhaust looks on my car. The valence needed to be cut to fit the quad tips. I used my dremel, it was quick and easy. I plan to add some door guard trim around the opening so that it looks nice and smooth. There is a thread on here with step by step on how to do all this.

I do remember someone in the forums do that. I might try tracking a pair of 18 and up stock exhaust.

The look of those tips goes back to the 15-17 V6 style that many of us wanted to get away from.

Have the same setup. A few other guys I know did the same. Initially I had it with h-pipe and it was loud/raspy. Removed the hpipe and put magnaflow tru-x from cjpony and it sounds lot better.

Do you have a sound clip of your setup? Interested to hear how that Tru-X sounds with the GT stockers.

I found the stock GT catback to be almost the same as the stock V6 exhaust. Definitely a deeper tone at idle from outside the the car, but otherwise not much difference. Then I added an X-pipe. The GT catback with X-pipe was a great inexpensive upgrade. It definitely changed the "stock" sound to a louder, sportier tone but it was actually quieter than I expected. I would have preferred a little more volume.

Eventually I replaced the stock mufflers with Borla S-types. That was a much bigger jump in volume than adding the X-pipe to the stock exhaust.

here’s a link to YouTube of both with or without the hpipe. I really liked the hpipe version but it was not smooth and felt too raspy. The magnaflow version is kinda like stock but takes away a lot of rasp and makes it a mellow. This is my fifth setup after all big names like slp, pipes and borla. Feels good when I am inside the car esp that bit of low grumble. Also not sure why but I feel the car more responsive after the magnaflow tru-x.

Oops, my comments were about a 15-17 stock GT exhaust. I'm sure the 18+ stock mufflers with an X-pipe would be louder. I now own a '19 GT and agree the stock exhaust is noticeably louder than the 15-17.

Does anyone know if the stock exhaust from a 2018 GT would bolt up similarly to that of a 2016 V6? Basically, will any GT exhaust from a 2015 - 2020 fit a V6 2015 - 2020?

Yes, they should be interchangeable. I have a 2018GT exhaust on my 2016 Mustang V6. Very easy swap.

Did you have to do any other modifications? I just want to be sure before I buy the setup — it has quad tips and the muffler itself looks larger and very different from even GT’s from 2015-2017

You would have to cut your valance IOT fit the quad tips. That's the only modification.
