Does anyone else do this when puttering around at low and moderate speeds in city traffic or otherwise?
I live in downtown Toronto and lately I’ve fallen into the habit of usually going straight to 3rd from 1st when accelerating from stop signs and red lights while driving in the city.
It means I’m shifting up at around 4500 rpm, which takes me directly to a comfortable cruising rpm of around 2000 until I get the next stop, which is usually not very far up the road.
Speed limits are mostly 30 or 40 km/h (20-25 mph) on most downtown Toronto streets, 50 and 60 km/h (30-35 mph) more rarely. Driving on streets that are crowded with other cars as well as pedestrians, bicyclists, kids on skateboards, e-bike and scooter riders, etc., means it would be reckless to drive above the posted limit, hard acceleration likewise.
Sounds pretty exciting, huh?
On the other hand it does make driving a manual in city traffic easier and more relaxing. Also, my exhaust is usually set at track mode, even while puttering around like this - got to get my pony-car jollies somehow!
Any one else here skip gears while driving moderately?

I tend to skip 3rd and go right into 4th then cruise at city speeds. 2 and 4 are alot closer than 1 and 3, so I don't have to rev that high to get into the next gear. IMO 4500 in 1st would be annoying and loud.

Yes, but like I mentioned I have to have my fun somehow and that’s where the great normally-aspirated Coyote just begins to really rock, at least in my opinion (with another 3000 rpm of escalating aural drama to go).
Also, I probably shift a bit lower than that much of the time, though I try not to shift much below 4000 as I don’t want to start in 3rd too far under 2000.

I thought 'short-shifting' was normal in manual vehicles.
I have always done it and certainly will in the '21 Mustang.

On the 11-14 the 1-4 lockout would force it if you went to the certain rpm and throttle input.

Sounds like you want it to act like what GM has to keep from getting the gas guzzler tax.

I may occasionally leave in 2nd, but I always shift through the gears. That’s why I got a manual.
On the other hand, one of the great things about a manual is that you choose how and when to shift and what gear to shift into.

3.31 gears and shift thru all the gears

I think it’s important in this thread to mention what gears your Car has. I might skip a gear if I was driving 3.73 or 4.10 gears

Drive mode skips 2nd and 4th at light throttle input. Sport mode skips 2nd in just the right conditions iirc.
