How do you know what PSI to use on aftermarket wheels/tires?

PSI is determined by the manufacturer to displace the weight of the vehicle across the width of the tire... regardless of how tall, wide the tire is the weight really doesn't change, no reason to increase/decrease PSI.

so no matter what wheels or tires are put on the car, it should always be 32 psi, cold?

same as for stock

look at the sticker in the drivers door jam

when you dont have stock size wheels and tires, pick the closest thing, and start from there. observe tire wear and handling and adjust as needed.

OP I have a very similar setup as you, 20x10 sqaure Essens but on 275s.

I keep mine at ~35 cold, roughly (34-37ish). I find 32 a bit too soft/wobbly feeling until they get up to temp at about 35.
