They are still building 2015 Mustangs until the end of July, so production totals won't be out until winter time.

Think mine was 41xxx and it was built beginning of January.

The plant is one week into a 3 week shut down at this time. It's my understanding that they will assemble the few remaining '15s and 2016 models will be in production by the last week of July.

Does anyone know about the production numbers for the 2015 GT 50 Year Edition / not the Limited Edition.

Final numbers won't be announced until a few months after 2015 production ends. Ford has a 'take rate' report that tallies the number of each option ordered for the model. I wouldn't be surprised if there were 30K-50K of the 2015's ordered with the 50 Year Appearance Package (EB and GT combined).
