Giant tiger prawns to start. Chilean Sea Bass and local purple asparagus for the main. The asparagus was the biggest I have ever seen. Everything turned out great! I was concerned about the size of the asparagus but they were tender and tasty

Been enjoying asparagus here for weeks, I get a pound of whatever looks best, blanch, then take a portion with me to work M-F lol Yours look prime!

The recipe called for fresh red chili but I only know of one store that carries them and I wasn’t about to cross 3 cities to get there. The charred lemon was a cool surprise though. More sweet, less bite than a fresh lemon.

Y'all know what time it is!!!

Round 3!!!

Gonna cook some this weekend.

$229 grinder new in a beat up box for $65 at the flea market.

My buddy picked it up for me and I'm giving him 2 full LP tanks since I sold my gas grill. So I still have the Blackstone and a spare tank for it.

I threw my chopped sausages from the other week in there with a deboned Boston Butt. Added extra seasoning to compensate.

Was amazed at how soft the texture was of fresh ground pork.

Maaaaan, I cannot express in words how good this is. I'm starting to love this Recteq. It did catch fire on me when i was searing the cut slabs and I struggled to get them off there in time! I like mine medium and was a thick cut so that definitely helped. Wife and kid like theirs more on the well-done side so all good there.

I just gotta find a way to mitigate that fire next time when going for the sear...

That looks fantastic!

The best one I ever made was 32 years ago for my 30th birthday. I took a 16lb whole ribeye and put in in a charcoal smoker for about 4 hours, timing it for the arrival of our guests. Rested it for 30 minutes, then sliced it into 12 steaks, and finished to everyone's doneness on a charcoal grill. OMFG, it was incredible.

Well my bratwurst kit came in. $21 shipped and it seasons 25lb of meat and comes with the natural casings too.

My local grocery had Boston butts for $1.69/lb if you bought a twin pack.

Ok then...I got 2 10 pounders, and got to chopping.

Grind...season....grind again. Hmmm. Add a tall boy Coors Light to make them beer brats? You betcha!

Install the stuffing kit and here we go...

Made about 80 good size brats. Gonna take a few bags to my brother's house... @Nitrousfedlx

By the way, I cooked my homemade breakfast sausage this morning and those were pretty dang good this time around. I forgot to take pics!

I'm grinning ear to ear dude! I just left my brother's house and he kept some out to cook tomorrow for lunch. Hopefully I get a report lol

I put all mine in the freezer bc I was in a hurry, I've got to take some back out, not sure if I'll cook mine tomorrow or Monday.

Can't wait to see what ya got cooking...pun intended hahaha!

I follow a guy on TikTok that's somewhere in Cali, his vids are what got me really wanting a grinder and trying to butcher some whole meats. We don't have a Costco here, best we got is Sam's Club so some of the things I want are a little harder to source.

Brats are really good! Flavor-wise about the same as any good brat, but the texture is a lot better. I can bite easily through the casing and the meat itself is very tender. Most store-bought brats, I feel like I have to puncture the skin and then try and rip off the rest...

Also none of them split open, which is a problem I always seem to have.

I cooked some in the grill pan, but I took the other half and simmered them in butter, beer, onions garlic and pepperoncinis with some of the juice from the bottle.

I'm stuffed! Haha, get it?!?!? I didn’t know which ones I like better, I started slicing some and just eating them with stone ground mustard.

I looked in the fridge and I was out of Sauer Kraut!
